Redemption is mine!

Great Success!
I redeemed myself last week with the creation of peanut butter blossoms and chocolate chip cookies.  It was last Tuesday evening when I began to bake Christmas cookies for the Koch's and Brian's office.  Well, that is after we had a scrumptious meal with the Buffalo Family.  I began to bake while the 2 amigos and Katie with baby talked with Lizzy on Skype.  First up, the peanut butter blossoms.
This time I made sure that the butter was actually soft.  When the directions say "soft" to me that usually means, put me in the microwave until it begins to melt.  Not completely melt, but melt to the point where part of the bar begins to run.  So I put the butter into my mixer (of which I have yet to name) along with the other called for ingredience and away I went. I used up all of my shortening and put a huge chunk of peanut butter in to make sure they were extra creamy, and wouldn't dry out.  They finished and I grabbed a spoon, rather than my awesome cookie scoop ( I didn't want the cookies to be to big, as I had to feed 5+ people!) and I plopped them on my cookie sheet.  They looked pretty good if I do say so myself, but the cherry on top were the Hershey Kisses and Reese's mini peanut butter cups.
I baked the cookies and as soon as they came out I put the chocolate on top.  They melted and smelled so good.  The kisses looked so shiny and the mini cups just melted into the cookie.  I was so excited.  They all actually came out!  I had redeemed myself.  About 3 dozen blossoms and 2 rounds of Glee Vol. 4 later, I had finished.  Well, almost.
On to the chocolate chip cookies.  They were your basic chocolate chip cookies, but they were extra gooey right out of the oven.  They almost completely flattened out, but they were still a little lumpy.  Probably due to the massive amount of chocolate chips I put in them; but that's what makes them good right?  All in all both cookies turned out really well and weren't hard the next day.  That, I consider to be a success.  I also found a secret while I was baking... if your brown sugar is too hard, grab a fork!  I raked the sugar lightly and it became so fluffy.  It was easier for me to measure and for my mixer to mix.  You probably already knew that, but just pretend like you didn't know.  It'll make me feel better.

Overall a great success.  Now since Christmas has passed I am going to take a slight break from baking cookies and eat them, since we have so many cookies covering our kitchen table.
